You guys know I love meal prepping. I usually prepare meals on Sundays for the week. I find it helps me feel more prepared for the week. Meal prepping also ensures I’m making healthy choices during the week, even if it gets busy. I’m not tempted to go through the drive-through because I know there’s a delicious meal waiting for me at home! However, I did some next-level meal prepping to prepare for my second maternity leave. It’s the holiday season! I love the holidays. The extra time with family, the lights, giving gifts, and, of course, the food. I love food. Sharing a meal with my loved ones is one of my favorite things. However, the holidays can be a difficult time to stick to your wellness goals. At the beginning of my nutrition journey, I really struggled with self-control during the holidays. I would overindulge and end up feeling sick. If you can relate, you’re in the right place. Ivette and I are talking about nutrition, embracing cultural cuisine, and how to make healthy choices at restaurants. Ivette is Puerto Rican, and, as you know, I’m Persian-American. We bonded over our cultures, and we both love speaking about them. So today, let’s chat about embracing different cultures through food and how to choose healthy options at new restaurants. Look Ahead: Look at the menu ahead of time to make sure there are options you can eat. Portion Sizes: Know that the portions in the United States are completely exaggerated and unrealistic compared to other cultures. Avoid Fried Food: Try to avoid fried foods. Eat Before You Go: When I eat a small snack before we go, I’m more realistic about what I’m hungry for. It’s fantastic to go to new restaurants and try the foods of different cultures. I highly encourage it! When you go out, you can still stick to your health goals. It can potentially get you into a better school and just teaches you how to study for important tests before going to college. I had major test anxiety in college, so I also teach my math astronauts how to reduce test anxiety and learn how to study smarter. That’s what I want to share with you today! Your mental health, physical health, and nutritional health are the top three areas that will help you earn a good score on standardized tests. We have an amazing guest with us this week! Let me introduce Ivette - my former NASA mentor! We are such great friends, and I appreciate her taking the time to come on the Launching Forward podcast. We started working together at Kennedy Space Center in 2008, and she encouraged me to pursue entrepreneurship! She’s an inspiration to me, and I know many others, too. Today, we’re talking about the challenges and lessons of being a woman in the STEM field. When Ivette started at NASA in 2003, she was the only female in the office. It’s challenging to work in an office as the only female. There are several other industries where this is the norm.
